RAW VEGAN Sushi Rolls


Here is another quick and easy raw vegan meal. It is One of my favorite raw vegan dinner meals to make is usually on repeat a couple times a week. I have made some tweaks to my original recipe and I have to say this recipe is straight fire . And then to complement it with the Tahini dressing , you will have a new outlook on eating raw vegetables. Here is the recipe:

Ingredients:

Sushi Nori wraps 1/2 raw cauliflower Favorite veggies to slice (I used avocado, tomato, cucumber, carrots, cilantro) 1 - 2 teaspoons coconut aminos (adjust to taste) 1/2 teaspoon salt 1/2 teaspoon black pepper 1 teaspoon garlic powder A little water to place on edges of Nori wraps to seal

That’s it!

Wash and Rinse cauliflower and set one half aside. You will only need one half for the recipe.

Pulse cauliflower in a food processor or blender.

Place pulsed cauliflower in bowl or container and season with coconut aminos, salt, black pepper, and garlic powder.

Slice vegetables you will use very thin to assemble in wrap.

Grab a Nori sheet and place on a flat surface. Place riced cauliflower on the Nori sheet until it fills the wrap evenly. Do not overfill. Leave some space around the edges so the wrap doesn’t fall apart when wrapping.

Add your veggies evenly.

Get some water to place on the edges of the Nori wrap to seal once rolled.

Roll your wrap slowly and set to the side. Make as many wraps as you can with the leftovers. This recipe makes 3 rolls.

Place in refrigerator for 30 minutes to set. (Optional. The roll slices better when set in refrigerator). I did not place in refrigerator and it still came out great.

Slice your sushi roll evenly and carefully.

Serve with tahini dressing and enjoy!


You will be delighted that raw vegetables can taste this good!

Tahini dressing:

1/2 cup tahini 6 tablespoons lemon juice 1/4 cup water 1/2 to teaspoon salt(adjust to taste) 1/2 teaspoon black pepper 1 teaspoon garlic powder

Mix all ingredients in a mason jar or container. Shake well or stir until it becomes thick. You can add more water to your desired consistency. You can also add more seasoning to your taste .
