Lettuce wraps are a delicious way to enjoy veggies on a raw vegan journey. This has been one of my favorite ways to enjoy vegetables and they are quick and easy to make. Just grab some lettuce or collard greens, and grab your favorite veggies to stuff inside the wraps. For these wraps, I used butter lettuce. I love how this lettuce variety holds up to the veggies once stacked inside. This wrap definitely fulfilled that taco craving, in a raw way. You can use all the variety of vegetable colors to create this one.
Here's what you need:
1 head of Butter Lettuce or Collard Greens
1/2 Cucumber , sliced
1/2 tomato, sliced
1/2 small beet, sliced
1/2 avocado, sliced
1/3 cup carrots, sliced
Favorite toppings: I used guacamole and salsa fresca, That's it! It's a quick, easy and delicious way to enjoy veggies.
