We all want to start the new year off with health goals, but this year, 2023, was going to be very different for us. My husband and I wanted to take the RAW VEGAN journey. We didn't just want to travel this road for 14 days or for even 30 days, we wanted to aim for at least 90 days. Raw vegan? But why? The journey to this point has been quite interesting and Holy Spirit led.
When breastfeeding our second born, I noticed that he would get a mild rash around his mouth and had similar patches on his arms and legs. After a routine check-up to the doctor, the doctor informed me that our son had an allergy to dairy and milk protein. He was not lactose intolerant, but indeed had an allergy to dairy. There is a difference between the two conditions and how their reactions present themselves. For our son, he would get hives when given dairy. I immediately stopped consuming dairy products and saw his skin condition improve. God then led me to do some more research about dairy products and I found that dairy contained so many allergens that would trigger our son's eczema. I decided to let go of dairy products for good and find alternatives, especially for the kids. Our oldest son still has cheese on occasion, but our two younger children are completely vegan. The journey did not stop there. God led me to information about the meat industry and the process an animal has to go through before making it on the plate. There is an immense amount of suffering, torture, agony, and pain that goes into the animals that are slaughtered for food. Unbeknownst to us, that same suffering is passed on to us and is revealed as high blood pressure, obesity, high cholesterol, diabetes, auto-immune disease, cancer, and the list goes on. This suffering that we are eating is also revealed in our lives as anxiety and depression. We often wonder why we can't sleep at night, or why we are in pain, or why we have so much swelling, or why we are having night sweats, and it's likely because of the suffering we are eating.
God took me back to Genesis 1:29. "And God said, "See, I have given you every herb that yields seed which is on the face of all the earth, and every tree whose fruit yields seed; to you it shall be for food. God also took me to Leviticus Chapter 11, where He discusses the clean and unclean animals for food. "God," I said inquisitively. "These are animals that we can eat, so why am I being led here?" God then led to me to Psalms 90:10, "The days of our lives are seventy years; And if by reason of strength they are eighty years. God also led me to Genesis 6:3 , "And the Lord said, "My Spirit shall not strive with man forever, for he is indeed flesh; yet his days shall be one hundred and twenty years." So help me to understand Lord, I inquired. We are able to live for at least 70 years and even until age one hundred and twenty? Why are we not living to see these years? God revealed to me that it is because of what we are eating why we are not seeing the years He has promised us. Our energy is being depleted, our minds are in bondage, our bodies are not performing optimally, simply because of the food we choose to eat.
I began to understand that the food of today, is not the food of yesterday. The food of today is highly processed, genetically modified, tortured and beaten, and/or sprayed with pesticides and insecticides. A balanced meal is taught to us by a government that funds the food industry into giving us those same highly processed foods. How can we win, when the system seems so against our well-being? Well, let me ask my doctor. They should know about nutrition right? Unfortunately, nutrition is not taught in medical schools and if it is, it is usually very brief or an elective. Most doctors know how to write a prescription for tablets more than they know how to write a prescription for restructuring your diet. Most will give you the medication so that you can keep your lifestyle instead of encourage you to change your lifestyle so that you won't need the medication.
I have been a part of the pharmaceutical industry for 13 years, with most of those years as a pharmacist and pharmacy manager. I have seen patients come in time after time, year after year, with the same medications. Patients are on the same medications for years and have no idea how to eat in order to get off of those medications. I knew I was a part of the wrong industry when I realized we were in the business to treat people, not heal them. God has given us everything we need to heal, but we have chosen to take the pill, instead of connect to the healing foods. Most healthcare professionals could not tell you what foods to eat to lower your cholesterol, or lower your blood sugar, or lower your blood pressure. In fact, I was encouraged to counsel patients to ask their doctor for medications for those conditions instead of lead them to healing herbs and plants. God has been calling me to connect to Him and to the Earth through eating from the Earth and that meant to eat raw fruits and vegetables. Little did I know that I would have quite a journey to get to this commitment.
When I was three months pregnant with our daughter, Regal, I decided to eliminate all animal products from my diet. I didn't make swaps, I didn't decrease my meat intake, I just let it go. I would have to cook this way for our son Rey anyway.
It was actually July, 4th, 2021. I was eating a beef burger my husband made on the grill and I just couldn't finish it. I had half of it and threw the rest of the burger patty in the garbage. I then finished the burger without the burger patty and enjoyed just eating the bread and condiments. Very different, I know, but that's how I felt about eating it. I spoke to my husband about what God revealed to me and he was on board for the children, but he was not ready to make the commitment for himself just yet. My husband was accustomed to eating animal products for almost every meal, so it would have been a huge change for him. I completely understood and sought on this journey on how to cook vegan for myself and for our children. It took some time, but I started cooking our meals and my husband would just add his animal protein on the side. I noticed that during this pregnancy with Regal, I did not have any swelling, morning sickness, any pain, or really any problems at all compared to my first two pregnancies. When pregnant with RD3, our first born, I was borderline gestational diabetic and was almost diagnosed with pre-eclampsia. What a difference!
On this vegan journey, I enjoyed learning about new dishes and even started baking vegan dishes. My godmother passed away in December of 2021 and she was the baker in our family. After her death, I took on baking and decided to make all of her favorites vegan. It was a hit in our home, and my husband absolutely loves the vegan carrot cake. I won my husband over with the vegan treats, but what did he think about the vegan food? The vegan movement is rising and with the many options available today, the transition was not difficult. My husband started to look forward to many of the dishes I would cook such as vegan sliders and roasted brussel sprouts. He then began to implement more vegan meals and even had days out of the week when he would go vegan for the entire day. I have to say, I was super proud of my husband for trying something different.
Towards the end of 2022, my husband was diagnosed with Type II Diabetes. He was experiencing some problems with blood circulation, increased liver enzymes, and an elevated blood sugar. When his physician checked his HbA1C, it was high enough for his doctor to make the diagnosis. The doctor suggested my husband start the medication Metformin and also start a diet. It was then that we knew we had to do something different. I wanted to start in that moment, but it being the end of the year with holiday festivities, we decided to start the new year eating healing and alive foods. We decided to go Raw Vegan eating fruits and vegetables only in their raw state for 90 days. I initially wanted to take this journey for 30 days, however my husband really wanted to go through for the 90 days. I made the commitment to stand by his side. It is our hope to reverse this diagnosis by eating from the Earth as God intended. We also decided that as much as this is a physical journey, this is also a spiritual journey and made this a fast, adding in daily prayer time with God. We both already had a set time to pray with God during the day, but during this fast, we wanted to take our spiritual life to the next level.
We learned that eating from the Earth is eating vitality and we are getting the energizing enzymes straight from the food. Eating raw fruits and vegetables is also healing as you are loading your body with the most nutrient dense way you can eat. We wanted to give our bodies a break from the heavy digestion and processing and really heal. Doing this will allow our cells to turnover and can literally add on years to our life. This is a chance for our bodies to take in oxygen and breathe. When you eat from the Earth, there is no suffering, there is no cholesterol, no high blood pressure, no high blood sugar, no anxiety, no depression, nothing but healing and vitality. We are two weeks in and I can tell you our energy is through the roof. As the only one in my family not diagnosed with high blood pressure, my blood pressure is the lowest it has ever been on this journey. And I plan to keep it this way.
This journey is not for everyone, but I do suggest that everyone will consider giving their bodies a break from the overload of this world . The way we eat affects every aspect of our lives. It affects our energy, our mentality, our spirituality, and every organ in our body. In order to operate at our highest self, we have to detox and heal. I know that everyone will not make the choice to be vegan, but it is my hope to inspire everyone to eat more plant based foods. Eating plant based is the foundation that I want our children to have so when they get older, they make healthy food choices. Let's keep it real, my oldest son may have a slice of cheese pizza for his birthday, and I may allow that. However, for me, as long as this foundation is laid, I know he will grow to eat wiser and ultimately wont have to worry about any chronic disease diagnosis in his future.
